Subject: Strawberry Salad
Content: Here is a nice yummy one!
1lb strawberries, hulled and cut in half or quarters depending on size
1lb green beans
1 cup of crumbled feta
1 cup of shelled pistachios
For dressing
4tpbs raspberry or blueberry vinegar
1tsp dijon mustard
1tsp extra fine sugar
1/4 cup EVOO something light and fruity, spanish or french or northern italian
salt and pepper to taste
For Salad, blanc green beans in boiling water, drop into ice water bath to cool and stop cooking you want them to have some crunch.
put into bowl with strawberries, feta and pistachios set aside.
Dressing
mix vinegar, mustard and sugar in bowl with wisk, slowly add EVOO to emulsify add salt and pepper to taste
drizzle dressing over the salad and mix well use a generous grind of fresh pepper on and serve immediately
I put this along side a lemon pepper grilled chicken breast and saffron orzo, suggested wine . . Chardonnay not real oak-y
